Zucchini pizza casserole makes a delicious family meal and even a meal for company. Not to mention it’s on the healthier side too!

Ingredients
4 cups shredded unpeeled zucchini
½ teaspoon salt
2 large eggs
½ cup grated parmesan cheese
2 cup skim milk mozzarella
1 cup shredded cheddar cheese
1 pound ground beef or ground turkey
½ cup chopped onion
15 ounces pizza sauce
1 medium green or red pepper, chopped
Directions
- Preheat oven to 400 F. Place zucchini in colander, sprinkle with salt and let sit for 10 minutes. Squeeze out water.
- Combine zucchini with eggs, parmesan and half of mozzarella and cheddar cheese. Press into a greased 13-by-9-inch or 3-quart dish. Bake for 20 minutes.
- In a saucepan, brown ground meat and onion and drain. Add tomato sauce and spoon over zucchini mixture. Sprinkle with green pepper and then with remaining cheeses. Bake until heated through — 20 minutes or longer.
To freeze: Bake, cool and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350 F. Unwrap casserole and reheat until heated through.
