Craving Chinese food without all the added calories? This quick and easy Zoodle Lo Mein Stir Fry is simple, healthy and tasty. Add some shrimp, chicken or extra veggies for a low carb main dish or prepare as a side dish for your next Asian-inspired dinner.

Ingredients:
Sauce
1/4 c. sesame or olive oil
1/3 c. reduced sodium soy sauce
½ T. xanthan gum Zoodles
2 med. zucchini, made into spiral zoodles
1 T. ground ginger
2 T. minced garlic
Directions:
- Mix sauce ingredients in a mason jar or a container with a lid.
- Shake and set aside.
- Add zoodles, ginger and garlic to a wok.
- Pour sauce over zoodles and stir over medium heat for approximately 5 to 7 minutes or until softened.
Each serving = 155 calories, 4 g. carbs, 4 g. protein, 12 g. fat, 815 mg. sodium, 14 g. fiber
