Whole Wheat Muffins

Enjoy these tasty whole wheat muffins with hidden fruits and vegetables. This recipe is simple and healthy!

Whole Wheat Muffins
INGREDIENTS
1 cup whole wheat flour
¾ cup all purpose flour
¼ c toasted wheat germ
¼ cup sugar
2½ tsp. baking powder
½ tsp ground cinnamon
½ tsp ground cloves or nutmeg
1/8 tsp. salt
1 cup skim milk
½ cup grated zucchini
1/3 cup unsweetened applesauce
¼ cup egg substitute
1T. canola oil
1 tsp. orange zest
3 T. dry roasted chopped walnuts
INSTRUCTIONS
  1. Preheat oven to 375 F.
  2. Spray a 12 cup muffin pan with cooking spray.
  3. Combine the dry ingredients (1st 8 ingredients).
  4. Combine the milk, zucchini, applesauce, egg substitute, canola oil and orange zest.
  5. Make a well in the dry ingredients and pour in the liquid ingredients.
  6. Add the walnuts. Stir just until moistened.
  7. Spoon into muffin cups.
  8. Bake 20-25 minutes.
NUTRITIONAL INFORMATION
Each muffin = 124 calories, 3 g fat, 128 mg sodium, 21 g carbohydrate, 2 g fiber, 4 g protein.
