This tried and true, classic vegan banana bread recipe is moist, healthy and so easy to make. It’s egg, oil and dairy free and is the best banana bread ever!
Ingredients
3 very ripe bananas
½ cup maple syrup
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 ½ cup whole wheat flour
¼ cup ground flaxseed
1 teaspoon baking soda
Pinch of salt
Instructions
- Preheat oven to 350o. Put bananas into a mixing bowl and mash with a fork or potato masher until fairly smooth.
- Add the maple syrup, applesauce and vanilla extract to the bananas and mix well.
- Add the four, ground flaxseed, baking soda and salt. Stir well until all the ingredients are thoroughly combined to make the batter.
- Pour the batter into a silicone or nonstick 9 x 3 x 5-inch loaf pan and bake for 50 minutes. Depending on your oven, it could take a few minutes longer. Use a tester or butter knife inserted into the middle to check if the bread is done.
- Remove the bread from the oven and let it cool in the pan for a minute. Then remove the bread from the pan and let it cool completely.
- Slice and serve.
