Stuffed peppers are a great dish that include multiple food groups. This recipe also includes healthy ingredients that help cut down on the fat content and the guilt!

Total Time: 60 minutes
Ingredients:
4 lg. bell peppers of your choice, stems and seeds removed, sliced in half lengthwise.
½ c. brown rice, cooked according to pkg. directions
1 T. olive oil 1 lb. ground turkey
2 - 3 garlic cloves, minced ¼ red onion, minced
¼ c. parsley, chopped salt to taste
½ tsp. pepper
1 c. marinara sauce
shredded mozzarella cheese
Directions:
Preheat oven to 375.
In a large skillet, add oil and turkey.
Cook until done.
Add garlic, onion, parsley, salt and pepper.
Add marinara sauce and rice.
In an 8 x 8-inch baking pan, add the bell peppers and fill them with the mixture.
Sprinkle with cheese and bake for 45 minutes.
