This traditional stewed chicken dish begins with a browned, cut up chicken, that is paired with bold flavors and an abundance of vegetables.

Ingredients
1 pound boneless skinless chicken breast, cubed
1 tablespoon olive oil
3 cups chopped vegetable of your choice, such as spinach, carrots and onions
1 14.5-ounce can of diced tomatoes
½ teaspoon cinnamon
½ teaspoon cayenne
1 teaspoon cumin
Rice or couscous for serving
Directions:
- Heat the olive oil in a large pan. Sprinkle with chicken and cook until browned.
- Add vegetables to the pan and sauté about 5-10 minutes.
- Add the tomatoes, cinnamon, cayenne, turmeric and cumin. Simmer until chicken is cooked through and vegetables are soft, about 20 minutes.
- Cook rice per package directions, while meat is simmering. Serve chicken over rice.
