Slow Cooker Easy Lentil Soup

If you're looking to add more fiber to your diet, this Slow Cooker Easy Lentil Soup is for you. With plenty of vegetables and beans, this filling and healthy soup is packed full of fiber. Set it and forget it. This soup can be tossed in the crock pot before work and will be ready for dinner when you get home! 

Prep Time: 10 minutes
Cook Time: 8 hours 
Total Time: 8 hours and 10 minutes 
Slow Cooker Easy Lentil Soup
Ingredients:
4 c. low sodium vegetable broth
1 (14-oz.) can tomatoes
1 onion, diced
1 carrot, diced
1 celery stalk, diced
1 c. lentils
2 cloves garlic
1 tsp. salt
1 tsp. tomato paste
1 bay leaf
½ tsp. cumin
¼ tsp. paprika
2 tsp. wine vinegar

Directions:
  1. Combine all of the ingredients in a slow cooker, except for the wine vinegar.
  2. Cook on low for 8 hours.
  3. Remove bay leaf and add wine vinegar.
