Roasted Shrimp and Orzo

This easy and quick orzo salad with roasted shrimp is perfect for picnics or outdoor gatherings. Enjoy!

Roasted Shrimp and Orzo
Ingredients
1 tsp. salt
2 tsp. pepper
¼ c. olive oil
¾ lb. orzo pasta
½ c. lemon juice
2 lbs. peeled and deveined shrimp
1 c. scallions, minced
1 c. fresh dill, chopped
1 c. fresh parsley, chopped
1 cucumber, seeded, unpeeled and diced
½ c. red onion, diced ¾ lb. feta cheese
Directions
  1. Preheat oven to 400. Cook orzo according to package directions. Add dash of oil and 1 Tsp salt to water. Drain and pour into large bowl.
  2. Whisk together lemon juice, olive oil, ½ tsp. salt and 1 tsp. pepper. Pour over hot pasta.
  3. Place the shrimp on sheet pan, drizzle with oil and sprinkle with salt and pepper. Toss to coat.
  4. Roast 5-6 minutes, until shrimp cooked through. Don’t overcook!
  5. Add the shrimp to the orzo and then add the scallions, dill, parsley, cucumber, onion, ½ tsp. salt and 1 tsp. pepper. Toss well. Add the feta and stir.
  6. Set aside for 1 hour to allow the flavors to blend or refrigerate overnight.
  7. Serve at room temperature.
