Serving: ½ cup
Ingredients:
3 beets, washed, peeled and chopped
1 T. olive oil
1 T. balsamic vinegar
1 T. fresh rosemary, chopped
Directions:
- Preheat oven 400.
- Place the beets on a cookie sheet lined with parchment paper.
- In a small bowl, mix oil, vinegar and rosemary.
- Pour mixture over the beets to coat evenly.
- Bake 30 to 40 minutes until tender.
- Salt and pepper to taste
