Mushroom and Spinach Cauliflower Rice

Looking for a quick, easy and healthy side dish to add to your next dinner? This mushroom and spinach cauliflower rice is a delicious way to fuel your body with much-needed vitamins and nutrients.  

Makes 4 servings

Prep Time: 5 minutes 
Cook Time: 10 minutes 
Total Time: 15 minutes 

Mushroom and Spinach Cauliflower Rice
Ingredients:
1 (10-oz.) pkg. frozen riced cauliflower
1 T. reduced sodium soy sauce
2 T. olive oil ½ c. onion, chopped
2 cloves garlic
3 c. mushrooms, sliced
2 c. spinach soy sauce to taste

Directions:
  1. Cook cauliflower rice according to package directions.
  2. Heat olive oil in a skillet, add onions and cook until soft.
  3. Toss in mushrooms and sauté until cooked.
  4. Add garlic and stir.
  5. Add cauliflower rice and soy sauce.
  6. Stir until cauliflower rice has absorbed soy sauce.
  7. Top mixture with spinach.
  8. Stir and cook until the spinach is wilted.
1 serving = 37 calories, 4 g. carbs, 2 g. fat, 2 g. protein, 34 mg. sodium
