Ingredients:
1 (10-oz.) pkg. frozen riced cauliflower
1 T. reduced sodium soy sauce
2 T. olive oil ½ c. onion, chopped
2 cloves garlic
3 c. mushrooms, sliced
2 c. spinach soy sauce to taste
Directions:
- Cook cauliflower rice according to package directions.
- Heat olive oil in a skillet, add onions and cook until soft.
- Toss in mushrooms and sauté until cooked.
- Add garlic and stir.
- Add cauliflower rice and soy sauce.
- Stir until cauliflower rice has absorbed soy sauce.
- Top mixture with spinach.
- Stir and cook until the spinach is wilted.
