Mini Cinnamon-Apple Empanadas

Empanadas don't have to be savory—dessert empanadas are a lot of fun to make, and everyone loves them. These cinnamon-apple empanadas are a tasty treat for the whole family!

Total Time: 30 minutes 
Mini Cinnamon-Apple Empanadas
INGREDIENTS 
1 T. Butter 4 Apples, cored and chopped small pieces
2 T. Brown Sugar
1 tsp. cinnamon
1 tsp. vanilla
20-30 wonton wrappers

INSTRUCTIONS
  1. Preheat oven to 375 F.
  2. In a glass bowl, add butter and apples.
  3. Place in microwave 1-2 minutes to melt butter.
  4. After melted, stir in cinnamon, vanilla and brown sugar and set aside.
  5. Lay won ton wrapper non-floured side up on work surface with the point towards you. Spoon 1 T. of apple on the wrapper. Brush edges with water. Carefully fold edges together, forming triangle—seal edges.
  6. Spray cookie sheet with non-stick cooking spray. Lay empanadas on the pan. Spray tops of empanadas with cooking spray. Place in oven and cook 15 minutes or until golden brown.
  7. Serve warm, may sprinkle with more cinnamon.
  8. Drizzle with warm caramel sauce if desired.
