Ingredients:
1 yellow squash, cut into 1/2" chunks
2 zucchinis, cut into 1/2" cubes
4 ounces mushrooms, cut in half
1 red onion, cut into pieces
1 red bell pepper, cut into 1/2" chunks
Marinade:
4 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/2 teaspoon dried thyme
Directions:
1. Place marinade ingredients in a large bowl and whisk until combined. Add chopped vegetables to the bowl and stir until the vegetables are fully covered. Allow to marinate for 10-15 minutes.
2. Place marinated vegetables in the air fryer basket and cook at 400 F for 15-18 minutes, stirring every 5 minutes until tender. Serve warm.
