Homemade baked beans

This healthy baked beans recipe has no molasses or refined sugar. Most vegan baked bean recipes are loaded with unhealthy sugars and additives. But, this recipe gets its amazing flavor from natural, healthy ingredients. 

Homemade baked beans

Ingredients 
2 teaspoon water

1 med. onion, chopped

3 cloves garlic, chopped

1 lg. red bell pepper, chopped

2 bay leaves

1 ½ tablespoon coriander seeds

1 ½ tablespoon paprika

1 sprig thyme

1 22-ounce jar pureed tomatoes

1 15-ounce can lima/butter beans, drained and rinsed

1 15-ounce can cannellini beans, drained and raised

Whole wheat bread or crackers for serving

Instructions

  1. Heat water in a medium saucepan. 
  2. Add chopped onion and garlic. Sauté until soft. 
  3. Add chopped bell pepper, bay leaves, coriander, paprika and thyme. 
  4. Cook through for 5 minutes until the bell pepper is soft. 
  5. Reduce heat to medium-low. 
  6. Add pureed tomatoes and drained/rinsed beans. Cook on low heat, stirring occasionally for 30 minutes. 
  7. Serve with a thick slice of whole wheat bread or crackers.
