Ingredients:
Dressing
1 T. olive oil
1 T. lime juice
1 T. finely chopped cilantro or parsley
1 T. sour cream
1 clove garlic, minced
Salt and pepper to taste
Salad
¼ c. Chickpeas
¼ c. Quinoa
¼ c. Cucumber
¼ c. Edamame
1 c. Spinach
Directions:
- Combine dressing ingredients and place in the bottom of a mason jar.
- Layer rest of salad in order given.
- Refrigerate up to 4 days.
