These Flourless Zucchini Brownies are so fudgy and rich, loaded with chocolate chips plus zucchini which makes them extra moist!

Ingredients
1/3 cup canola oil
1 ¼ cup chocolate chips
¾ cup granulated sweetener
¼ cup zucchini, grated with moisture removed
2 large eggs (or ½ cup apple sauce)
2 tablespoons cocoa powder
3 tablespoons arrowroot powder or cornstarch
Directions
- Preheat the oven to 350 F. Line an 8-by-8-inch pan with parchment paper or foil. Lightly grease.
- In a microwave-safe bowl, microwave the canola oil and chocolate and melt until combined and smooth. Transfer the mixture to a large bowl. Add the eggs, zucchini, sweetener, cocoa powder and arrowroot powder and whisk very well until smooth and combined.
- Pour into a lined pan and bake 20-25 minutes until a toothpick comes out of the center “just clean.” Remove from the oven and allow brownies to cool in a pan for 15 minutes before transferring to a wire rack to cool completely.
