Creamy Spinach and Sausage Pasta

Creamy Spinach and Sausage Pasta is an easy one pot meal for quick weeknight dinners. The pasta cooks right in the broth for more flavor!

Total Time: 25 minutes Creamy Spinach and Sausage Pasta
Ingredients
6 ounces turkey sausage
1 medium onion, diced
14-ounce can chilies and tomatoes
2 cups low-sodium chicken broth
8 ounces pasta
3 cups fresh spinach
1 cup shredded Monterey Jack cheese

Directions
  1. Brown sausage in skillet. Add onion and sauté until soft.
  2. Add the can of tomatoes and chiles and chicken broth.
  3. Add the uncooked pasta to skillet, making sure it is all submerged under the liquid. Place lid on skillet and allow to boil. Turn down to low and let simmer about 10 minutes or until the pasta is tender, stirring occasionally.
  4. Stir in spinach until wilted. Sprinkle cheese on top. Allow to melt and serve.
