Creamy mushrooms

The easiest, creamiest CHIP-approved mushrooms you will ever have – it’s so good, you’ll want to skip the main dish and make this a meal instead!

Creamy mushrooms

Ingredients
1 tablespoon oil (olive is best)

1 med. white onion, halved and sliced

2 cloves garlic, finely diced

1 pound mushrooms, sliced

1 5.5-ounce can light coconut milk

3 ounces baby spinach

Whole wheat break of crackers

Instructions 

  1. Heat oil in a medium skillet or frying pan. Add onion and garlic, and sauté until soft. 
  2. Add sliced mushrooms and cook until browned, stirring occasionally. Add coconut milk and heat through. 
  3. Add baby spinach and serve with toasted bread or crackers. Tip: Serving on whole wheat bread or crackers will add extra fiber to your meal. Serves 6.
