This Cauliflower Potato Salad is made with cauliflower instead of potatoes. This quick and simple recipe is perfect for a Keto diet or for anyone who is looking to cut out extra carbohydrates.

INGREDIENTS
4 c fresh cauliflower florets
¾ c frozen peas
¼ c grated Parmesan cheese
2 hard cooked eggs, peeled and chopped
1/3 c finely chopped celery
½ c plain Greek yogurt
2 t Dijon mustard
¼ t dried dill weed
¼ t salt
1/8 t ground black pepper
INSTRUCTIONS
- Place cauliflower in large microwave safe bowl, cover. Microwave on High 3 min.
- Add peas; cover and microwave 2 min. more or until cauliflower is tender and peas are thawed. Cool slightly.
- Add parmesan cheese, eggs and celery to bowl.
- Stir together remaining ingredients in small bowl. Add to vegetable mixture; stir gently until blended.
- Serve immediately or refrigerate before serving.
