Avocado Corn Salad

Enjoy this fresh, colorful and crisp salad without the guilt. Made with healthy ingredients, this recipe is just 75 calories and 8 grams of carbohydrates per serving.

Avocado Corn Salad
INGREDIENTS
2 c canned (1 can or frozen whole kernel corn)
1/4 teas chili powder
1/2 Tbl olive oil
1/2 c diced red onion
2 Lg avocados, pitted, peeled and diced
1 (15oz) can Ro-Tell Mild diced tomatoes and green chilies, drained
1 Tbl fresh lime juice
1/4 teas. Salt
1/4 teas. Grd pepper
2 Tbls chopped fresh cilantro
INSTRUCTIONS
  1. Preheat oven to 400F.
  2. Line a baking sheet with parchment paper.
  3. Stir together corn, chili powder and olive oil in a medium bowl.
  4. Spread the mixture evenly across the parchment paper. Bake for 10min. and cool immediately.
  5. Transfer the corn to a large serving bowl toss it together with the red onions, avocados, tomatoes, lime juice, salt, pepper and cilantro.
